Happy Earth Day! While we are thankful for how delicious oysters are, we are even more thankful for how much good they do for the Earth.
Oysters are well known for their ability to filter the water they live in, but how much water they filter is truly remarkable. A single adult oyster can filter up to 50 gallons of water a day. When you imagine the scale of most oyster farms containing hundreds of thousands of oysters, a single farm can be responsible for filtering millions of gallons of water a day. This filtration, in large part, removes excess nitrogen and phosphorous from the water, making the surrounding habitat more hospitable for other species. We have already observed positive impacts in our leased waters, including increased biodiversity of fish, crustaceans, invertebrates, and proliferation of eel grass.
